Cured with a little coffee for depth of flavour, slow smoked over oak and then hot roasted. Very tender and juicy. 😍🐟

Try something different this Xmas.
Brined in Spanish sea salt then slowly Oak smoked for 12 hours over night.
Superb with just a knob of butter for breakfast.
