Cured with a little coffee for depth of flavour, slow smoked over oak and then hot roasted. Very tender and juicy. 😍🐟
Hot smoked Rainbow trout and Red mullet here today.
It’s the first time I have smoked red mullet and I’m pleased with the flavour, they have lifted off the bone while roasting so don’t look pretty but it’s all about the flavour. 😍🐟
